Chocolate Sponge Cake in Microwave

After numerous trials and errors, I am finally able to make moist and soft sponge cake in microwave oven. Sharing my recipe:

Take a bowl and add 2 tablespoon desi ghee and quarter cup sugar. Mix thoroughly till sugar dissolves completely in the ghee. You may use powdered sugar as well. Add one egg to the mixture and beat the mixture till you get good froth.

Now in another container, take a cup of all purpose flour (maida) and add half tea spoon of baking soda, half tea spoon baking powder and half tea spoon of salt. and mix this dry mixture.

Now add this dry mixture little by little to the first bowl and keep folding in. Stir the mixture well till the mixture is smooth and homogeneous with no lumps.

Now add 2 tablespoons of milk to the batter and mix again.

The cake batter is ready. At this stage, you may add 2 tea spoons of cocoa powder or few drops of vanilla essence or any flavouring of your choice. You may also add none of these and keep the batter as is for a plain cake.

Keep the batter in fridge for 30 mins.


Now take another microwave safe container preferably ceramic or glass and grease with oil. Dust it with dry flour. Now microwave the empty container till flour is little brownish.

Now remove the batter from fridge and pour it in this microwave container. Now put the container in microwave on lowest power setting for 5 minutes. (I generally keep on 30% power). Poke with a toothpick, if it comes out clean your cake is ready and risen :) Else, keep it for more 2 mins and do the toothpick test again. Do not overheat, as the cake will  keep cooking even after taking out of the microwave.

I generally use nutella as icing.  And your delicious cake is ready!!!
